30 min Tempeh Curry

30 min Tempeh Curry

Matt Kaplan is sharing a simple curry recipe using our seasoned curry tempeh!

Ingredients

  • 1 (8 oz) package of Tootie's Curry Seasoned tempeh, cut into slabs 1/4 inch thick
  • 2 Tbsp olive or coconut oil
  • 1/2 cup diced onion
  • 1 clove of garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp salt
  • 2 tsp garam masala
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 cup coconut milk
  • 1/2 cup water
  • Vegetables of your choice - I used kale, red peppers, and carrots

Instructions

  1. Brown the tempeh in a saucepan over medium-high heat, ~3-4 minutes on each side. Set to the side.
  2. Saute the onions in the hot pan for 4 minutes.
  3. Add the garlic, ginger, salt and dried spices, saute for 2 minutes, stirring often.
  4. Turn the heat off and add the coconut milk.
  5. Serve the sauce over rice and top with the tempeh and vegetables.
  6. Enjoy!
