30 min Tempeh Curry
Matt Kaplan is sharing a simple curry recipe using our seasoned curry tempeh!
Ingredients
- 1 (8 oz) package of Tootie's Curry Seasoned tempeh, cut into slabs 1/4 inch thick
- 2 Tbsp olive or coconut oil
- 1/2 cup diced onion
- 1 clove of garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp salt
- 2 tsp garam masala
- 1 tsp curry powder
- 1 tsp turmeric
- 1 cup coconut milk
- 1/2 cup water
- Vegetables of your choice - I used kale, red peppers, and carrots
Instructions
- Brown the tempeh in a saucepan over medium-high heat, ~3-4 minutes on each side. Set to the side.
- Saute the onions in the hot pan for 4 minutes.
- Add the garlic, ginger, salt and dried spices, saute for 2 minutes, stirring often.
- Turn the heat off and add the coconut milk.
- Serve the sauce over rice and top with the tempeh and vegetables.
- Enjoy!
