Asian-Inspired Crumbled Tempeh and Tofu

An easy and cooling recipe packed with protein that can be served hot or cold, created by Kachina at Watermelon Pie!

Ingredients

  • 3 Tbsp olive oil, divided
  • 2 Tbsp garlic, minced
  • 1 lb tofu, crumbled (Heiwa tofu is the best!)
  • 8 oz package Tootie's Tempeh, crumbled
  • 3 Tbsp tamari or soy sauce
  • Cilantro or scallions for garnish

Instructions

  1. In a large cast iron pan, heat 2 Tbsp oil over medium-high heat. Add crumbled tempeh and tofu. Cook for 7 to 8 minutes, stirring frequently.
  2. When getting browned and a little crispy, reduce heat to medium-low, push crumble to the side to make a space on the bottom of the pan. Add the remaining 1 Tbsp oil and the ginger and garlic, saute for 1-2 minutes.
  3. Mix the garlic and ginger in with the crispy crumble, add the tamari and cook for another minute or two.
  4. Serve with cilantro, peanuts or scallions (or all three!) sprinkled on top, and your favorite veggies.
