Smoked Tempeh Sandwhich

Ingredients
- 1 8 oz package Tootie's Tempeh
- 1 Tbsp Smoked Paprika
- 2 tsp ground cumin
- 1 tsp curry powder
- 1 1/2 tsp salt
- 1 tsp brown sugar
- 3 Tbsp oil of choice
Scallion Sauce
- 1 cup Scallion greens and whites, chopped
- 1 cup Cilantro, some small stems are okay
- 1/4 Fresh ginger, grated
- 2 limes, juiced
- 1 tsp sugar
- 2 tsp salt
- 1 package silken tofu
- 1/2 cup oil of choice
Instructions
- Mix the marinade all together into a shallow container.
- Cut tempeh into 2 inch wide strips and cut widthwise once to make thinner.
- If you don't have time to marinate you can steam the tempeh quickly and rub the marinade on both sides of the still warm strips.
- In a shallow saute pan, add oil to coat the bottom and warm over medium heat. Brown tempeh on both sides until golden and crispy, about 5 minutes per side.
- Serve it on a bagel (or choice of bread) with tomato, pickled red onions, greens and a vegan scallion-cilantro sauce.
Scallion Sauce
- In a blender combine: scallions, cilantro, ginger, the juice of 2 limes, sugar, salt, silken tofu.
- Puree on high until smooth, with the blender on, dizzle in oil of choice until emulsified.
