Smoked Tempeh Sandwhich

Ingredients

  • 1 8 oz package Tootie's Tempeh
  • 1 Tbsp Smoked Paprika
  • 2 tsp ground cumin
  • 1 tsp curry powder
  • 1 1/2 tsp salt
  • 1 tsp brown sugar
  • 3 Tbsp oil of choice
Scallion Sauce
  • 1 cup Scallion greens and whites, chopped
  • 1 cup Cilantro, some small stems are okay
  • 1/4 Fresh ginger, grated
  • 2 limes, juiced
  • 1 tsp sugar
  • 2 tsp salt
  • 1 package silken tofu
  • 1/2 cup oil of choice

Instructions

  1. Mix the marinade all together into a shallow container.
  2. Cut tempeh into 2 inch wide strips and cut widthwise once to make thinner.
  3. If you don't have time to marinate you can steam the tempeh quickly and rub the marinade on both sides of the still warm strips.
  4. In a shallow saute pan, add oil to coat the bottom and warm over medium heat. Brown tempeh on both sides until golden and crispy, about 5 minutes per side.
  5. Serve it on a bagel (or choice of bread) with tomato, pickled red onions, greens and a vegan scallion-cilantro sauce.
Scallion Sauce
  1. In a blender combine: scallions, cilantro, ginger, the juice of 2 limes, sugar, salt, silken tofu.
  2. Puree on high until smooth, with the blender on, dizzle in oil of choice until emulsified.
