Tempeh-Banana Bread

Tempeh-Banana Bread
Have any overripe bananas? Try this delicious tempeh-banana bread! Amazing what you can do with tempeh!
Ingredients
- 3/4 cake, Tootie's Tempeh (traditional)
- 1 cup flour (we used gluten free)
- 1/3 cup organic coconut sugar (or maple syrup)
- 1 tsp baking powder
- 1 tsp baking soda
- pinch of salt
- 1/3 cup neutral flavored oil (or coconut oil in liquid state, vegan butter at room temp)
- 1 tsp vanilla extract
- 4 small overripe bananas (mashed)
- 1/4 cup or less of non-dairy milk (we used soy)
- 1/2 - 2/3 cup chopped walnuts (optional)
- 1/4 - 1/2 cup chocolate chips (mini or regular) (optional)
- 1 tsp cinnamon (optional)
Instructions
- Preheat oven to 350F
- Combine all ingredients in a blender and blend until it's a smooth batter.
- Then add any of the optional add-ins.
- Pour into a pre-greased loaf pan and bake for 50-60 minutes until done.
- Let cool for 10 minutes.
- Enjoy!
