Tempeh-Banana Bread

Have any overripe bananas? Try this delicious tempeh-banana bread! Amazing what you can do with tempeh!

Ingredients

  • 3/4 cake, Tootie's Tempeh (traditional)
  • 1 cup flour (we used gluten free)
  • 1/3 cup organic coconut sugar (or maple syrup)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • 1/3 cup neutral flavored oil (or coconut oil in liquid state, vegan butter at room temp)
  • 1 tsp vanilla extract
  • 4 small overripe bananas (mashed)
  • 1/4 cup or less of non-dairy milk (we used soy)
  • 1/2 - 2/3 cup chopped walnuts (optional)
  • 1/4 - 1/2 cup chocolate chips (mini or regular) (optional)
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350F
  2. Combine all ingredients in a blender and blend until it's a smooth batter.
  3. Then add any of the optional add-ins.
  4. Pour into a pre-greased loaf pan and bake for 50-60 minutes until done.
  5. Let cool for 10 minutes.
  6. Enjoy!
