Tempeh Stir Fry

Tempeh Stir Fry
Who doesn't love a good stir-fry! This one is from our friends Taryn and Sydney from @vegan.inconvenience and @sydney_digregorio.
Ingredients
- 1 (8 oz) Tootie’s Tempeh
- 1/2 cup cornstarch
- 1/4 cup nutritional yeast
- Avocado oil for pan frying
- Veggies of your choice (such as broccoli, bokchoy, onions, mushrooms, carrots, etc)
- 1/4 cup coconut aminos (or tamari or soy sauce)
- 1 TBSP rice vinegar
- 1 TBSP agave
- 2 TBPS water
- 1 tsp corn starch
Instructions
- Cut the tempeh into 3/4 inch chunks and toss into the mixture of cornstarch and nutritional yeast.
- Pan-fry the tempeh in avocado oil until golden brown/crispy. Set aside.
- Sauté veggies of choice in oil until desired softness. Set aside.
- Mix together coconut aminos, rice vinegar, water, agave, and a little bit of cornstarch to make the sauce. Pour sauce into the pan and let it simmer until it thickens! Add back in the tempeh and veggies. Stir and enjoy with rice or noodles!
