Tempeh Walnut Burger

Tempeh Walnut Burger

This is a wonderful burger that you can also throw on the grill now that the weather is getting nicer. Enjoy!

Ingredients

  • 3/4 cup walnuts
  • 1 (8oz) Tootie’s Tempeh, crumbled
  • 2 tsp olive oil, plus additional for brushing
  • 1/4 cup finely chopped onion
  • 2 medium cloves garlic, minced
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup finely chopped carrots
  • 1/4 cup chopped mushrooms
  • 1 TBSP cumin
  • 2 tsp coriander
  • 1/4 tsp salt
  • freshly ground pepper
  • 4 English muffins or buns, split

Instructions

  1. Preheat oven to 350°F. Spread walnuts on baking sheet and bake until lightly toasted, 8 to 10 minutes. Set aside to cool.
  2. In food processor, pulse toasted walnuts to fine powder. In large skillet, heat 1 tablespoon oil over medium-high heat. Add onion and cook, stirring often, until softened, about 3 minutes. Add crumbled tempeh, garlic, bell pepper, carrot, mushroom, cumin, coriander, salt and pepper and cook, stirring often, 5-10 minutes.
  3. Let cool then pulse with a hand immersion mixer (or food processor) until half-way processed leaving some chunks.
  4. Form mixture into 4 round patties. Grill or pan-fry or grill until golden brown on both sides.
  5. Serve on a bed of lettuce or on a bun/English muffin with mayo, ketchup, avocado, sliced tomato, red onion.
