Easy Tempeh Stir-Fry

Easy Tempeh Stir-Fry

This is a quick and easy meal with tempeh where the flavors just POP!

Ingredients

  • 1 8 oz packet Tootie's Tempeh, sliced into bite sized pieces
  • 2 cloves of garlic, finely chopped
  • 1 onion, sliced
  • 1 red pepper, thinly sliced
  • 2-3 cups kale, chopped
  • 2 Tbsp avocado oil
  • For the sauce you can use: peanut, thai peanut, teriyaki, it's your choice!!

Instructions

  1. Saute tempeh pieces in 1 Tbsp avocado oil until crisp on both sides (we added a little garlic powder). Remove from pan.
  2. Saute onions, garlic, peppers, in remaining avocado oil until softened. Add kale until wilted.
  3. Add the tempeh back in for a few minutes and then when everything is ready add the sauce on top and let heat for a minute or so.
  4. Voila! Done in less than 15 minutes. Serve over your preferred grain or with a salad.
