Tempeh Swedish Meatballs

Ingredients
- 1 (8 oz) Tootie's Tempeh, crumbled well
- 1 Tbsp flaxseed meal (to make flax egg)
- 2 1/2 Tbsp water (to make flax egg)
- 1/3 cup vegan parmesan cheese
- 1 1/2 tsp onion powder
- 1 tsp garlic powder
- 2 tsp herbs de provence or italian seasoning
- 1/4 cup of fresh parsley
- 1/2 cup bread crumbs
- 2 Tbsp you favorite marinara or tomato sauce
- 1/2 tsp vegan worcestershire sauce
- Olive oil for sauteing
For Breading
- 1/3 cup panko
- 1/3 cup vegan parmesan cheese
Swedish Sauce
- 1 sweet onion, sliced
- 2 cloves garlic, minced
- 4 Tbsp butter
- 4 Tbsp flour
- 2 cups vegetable broth
- 2 tsp worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 cup vegan sour cream, at room temperature
- Fresh parsley and dill
Instructions
- You can either bake, air fry, or pan fry. If using oven or airfryer, preheat to 375℉.
- In a small bowl make the flax egg and set aside.
- In a medium bowl combine all the ingredients and mix well. Add salt and pepper to taste.
- Scoop about 1 1/2 tablespoon at a time and form into balls. Mix panko and parmesan cheese together in a shallow dish. Add tempeh balls one or two at a time and roll to coat.
- If you are pan frying, over a medium-high heat, add about 1 1/2 tablespoons of oil to a skillet. Add the tempeh balls to the hot skillet and brown on each. Set aside.
- In the same skillet, melt the butter and saute the onion and garlic over medium heat until soft and aromatic. Stir in the flour and cook for 2 minutes, stirring continuously, until it begins to brown.
- Deglaze with the broth the add the worcestershire sauce, Dijon and herbs. Reduce heat to a simmer. Stir in the sour cream about 1 tablespoon at a time until it is well incorporated.
- Add the tempeh balls back to the skillet and spoon the sauce over them. Allow them to reheat in the sauce for about 10-15 minutes.
- Garnish with some more fresh herbs and enjoy!
