Tempeh and BBQ Kale Tacos

Tempeh Tacos
Here is an easy Tempeh starter recipe! A simple, savory, and satisfying one!
Ingredients
- 1 (8 oz) Tootie’s Tempeh, cut into little cubes
- 1 1/2 TBSP avocado oil
- 1/2 red onion
- 1 1/2 cup kale, cut up
- 1 cup shredded cabbage
- 1 tomato, diced
- 6 corn tortillas (we love @tortilleriapachanga)
- 1/2 cup Chipotle Mayo (we like the Just brand)
- 1 avocado, sliced
- 1 cup BBQ sauce (we used Primal Kitchen brand)
Instructions
- Saute the tempeh cubes and red onion in the avocado oil until starting to brown, then add the kale and BBQ sauce. Cook together until everything is covered with sauce and nicely browned/cooked.
- Warm the tortillas and spread the chipotle mayo onto the tortillas. Assemble with tempeh/onion/kale, then avocado slices, then tomato, then cabbage (or use whatever veggies you like).
- Top with a dollop of the chipotle mayo. Cilantro and scallions are nice too (optional).
